Melted Snowperson Choco-Chip Cookies
Transition yourself from the sofa to the kitchen and make these
I don’t understand why everyone seems to be making such a fuss about transitioning, for here in Norway we just love it!
Of course, there might still be pockets of trans-haters scattered throughout the country, perhaps mostly found amongst those fanatical blond haired and blue eyed cross-country skiing enthusiasts. But as for the rest of us? Well, we are in unequivocal support of transitioning, especially after last weeks snow storms which crippled the entire country. You see, for the very vast majority of us Norwegians, the transition from winter to spring cannot now come soon enough.
Stuck indoors, there is not much for us to do except to cook and eat. But as they always say, when life gives you snow, make melted snowperson chocolate chip cookies. These are easy and fun to make and are the perfect remedy alongside a mug of cocoa to lift your despair as the blizzard rages on outside (and on social media).
Ingredients (makes 12 cookies)
I make these with this chocolate chip cookie recipe (except I use half the amount of chocolate).
In addition you will need:
a packet of marshmellows (you need 12 marshmellows for the snowman heads)
sugar candy eyes, bowties, nose etc (I got these at cacas) but you can also use a edible sugar marker pen (also at cacas, but these do bleed into the marshmellow so try if you can to get edible candy for the face instead)
icing sugar (mixed with 50/50 lemon and water for a citrusy taste).
Method
Make the cookie dough in this recipe
Divide into 12 equal sized balls (slightly bigger than a golfball, remember you need space for the snowman)
Place on a baking tray and follow cooking instructions in original recipe (you might have to make in two batches as these are larger than normal cookies).
Allow to cool and then sculpt your marshmellows into faces using the sugar candy and icing sugar as glue.
After each is done, cut off a bit from the bottom back of the marshmallow so that the head is faced upward. (Imagine, if you will, that the snowman is pleading to the sun to stop shining and melting them)
Sprinkle icing sugar over each cookie and then place the marshmallow head on top.
Allow to set and then serve to awe inspired children and adults.
